Abstract

Optimization of pulsed electric field design is required for each type of seafood sample processed by salting process. In this study, the pulsed electric field design used the trial and error method to determine the electric field generated by the electrodes so that it has good validity at a certain time with the ratio of salt solution and distilled water. In addition to evaluating the electric field generated, suitable components were also determined to meet adequate reliability. The system generates 50 kV output electricity with a frequency of 10-1000 Hz. The device was tested in a treatment chamber with low 5% (m/v), medium 15% (m/v) and high 20% (m/v) salt content and compared with distilled water. The results showed that the salt content affected the speed of the output electrical value measured at the anode with the fastest time intensity averaging 10 seconds for each salt content. Reliability tests show that the use of ignition coil with a maximum high voltage of 50 kV can operate properly up to 100 minutes, but if used up to 120 minutes causes damage so that the evaluation used by changing the type of transformer and ignition coil is carried out.
