Abstract

Wonogiri Regency is one of the regencies in Central Java Province that has the Sebaguna Dam of Gajah Mungkur. This dam serves various functions, one of the is aquaculture activities, with the dominant are tilapia, catfish, carp, and tawes. Increasing the production of aquaculture, particularly tilapia, it is necessary to enhance community understanding of fishery product diversification to increase the added value. Through the community service program, dosen pulang kampung 2025, then acceleration of nutritional quality was carried out, namely the fish protein concentrate (FPC) processing and its application in crackers. Crackers were chosen as a model for nutritional intervention products since they are popular with all age groups, including children. The training activity was held on Tuesday, July 29, 2025, at the Kebonagung Village, Sidoharjo District, Wonogiri Regency. The training was attended by 30 participants, who were members of Poklahsar Rejo Makmur. Participants received material on producing of FPC, fish and FPC crackers, and directly practice on making both fish and FPC crackers. Participants, guided by an instructor, successfully made both fish and KPI crackers, as well as the hedonic sensory test. The hedonic sensory shows that the participants, who also served as panelists, preferred the KPI crackers than the fish crackers, with average overall scores of 7.63 and 7.07, respectively. Sensory testing scores confirmed that the FPC crackers complied with SNI 8272:2016 (Standard Crackers of Fish, Shrimp, and Mollusc). KPI crackers have the potential to be snacks and side dishes on the program of Makan Bergizi Gratis (MBG), and can contribute to achieving Asta Cita, particularly Cita 2 food self-sufficiency, Cita 5 increasing domestic added value, and Cita 6 on developing from villages and the grassroots level.
